Moimoi recipe

Moimoi is made from grinded beans, beans flour or blended beans. It can be enjoyed with pap or bread or both. Itcan be made using moimoi leaves, moimoi cups,nylons. This recipe is focused on making moimoi with cup

Ingredients you need includes;

  • Beans 4milk tins/ 2 cups
  • One large Onions
  • 6 Red bell pepper/tatashe
  • 4 scotch bonnet pepper/rodo
  • Water
  • Magii
  • A pinch of salt
  • Ground nut oil(one kitchen spoon)

Steps in making moimoi

  1. Soak beans in water for few hours
  2. Peel the beans by rubbing in between your hands.
  3. Seive the beans by pouring the water along with the peels
  4. Repeat process four times until all the peels are gone
  5. Slice onions, scotch bonnet pepper and red bell pepper
  6. At this stage, you can grind it with a machine or a blender
  7. If you are using a blender, add enough water and few quantity of beans at first,
    • Blend then add more beans
    • Blend until it’s totally smooth
  8. Pour blended/grinding mixture in a bowl

Seasoning of moimoi

  • Add magii depending on the quantity of beanI used 4 cubes for this quantity of beans
  • Add a pinch of salt
  • Stir continously in one direction

Filling your moimoi

  • Boil your eggs
    • Slice the eggs into pieces or use whole
  • For fish-filled moimoi
    • Boil the fish with salt, you could use Titus fish
    • In this case the quantity of magii needs to be reduced to two or three cubes or two

Steps continued

  1. Oil your cups
  2. Using a measuring cup, pour a certain quantity of moimoi into the cups
  3. Add your eggs/fish
  4. Get a large pot Fill it with little water
  5. if the water is too much it would flow inside the moi moi
  6. Cover the pot and steam for 30 minutes

  • After steaming your moimoi
  • Remove them from the pot and open the cups a bit for it to solidify
